Smashed pea toast with herbs
Frozen peas make a bright toast topping with very little preparation. Mashing by hand leaves texture and avoids washing a blender. Add the herbs at the end and taste before deciding whether the mixture needs more lemon.

How to make it
- Cook peas in boiling water for the time specified on the packet, usually 3 to 5 minutes. Drain thoroughly.
- Mash peas with oil, lemon juice, herbs and seasoning, leaving some texture.
- Toast bread. If using garlic, rub a cut clove lightly over the warm surface.
- Spoon peas generously onto toast and serve immediately.
Make it work in your kitchen
Well-drained peas keep the bread from becoming soggy. Add a little feta if you want a different flavour, remembering it adds dairy and salt. Choose a suitable bread for any wheat or gluten restriction and use clean equipment to avoid cross-contact.
